As an example, In my current Arsenal save (first season) Hector Bellerin has 3 years left on his contract. I offer to extend and he says he isn't interested due to the interest in him (major interest from Barcelona, Borussia Dortmund, Bayern and Liverpool). I think fair enough, try 3 times to extend and he gives the same response. So I transfer list him a couple of days before the January transfer window and he is now very upset and concerned about his future at the club. Doesn't make much sense - there should be an option in these situations that if he is refusing to commit his future to the club, then he runs the risk of being sold? I would have left well alone, either the big boys come in with their offers or they go away and no harm done.
